RASPBERRY & CHOCOLATE CUPCAKES

Now get going into the recipe.

To make this recipe you will need the following ingredients:
(12 cupcakes)

- 4 eggs
- 125g self-raising flour
- 125g caster sugar
- 125g butter
- 200g dark chocolate
- a few drops of vanilla extract

For the frosting you will need:
- 250g confectioner's sugar
- 125g room temperature butter
- Red or Pink food coloring
- Strawberry flavouring
- Raspberries
- Mint leaves

Melt the butter and the chocolate in a bowl, in the microwave. Keep checking every 30 seconds and mix with a fork.

Add all the other ingredients in a bowl and mix them all until you get a slightly thick batter. Then, incorporate the chocolate mixture, but make sure you add only small bits at a time, otherwise you will cook the eggs in the batter. Don't stop mixing while adding the two mixtures.

Divide your batter into cupcake molds, lined with paper or silicone molds.

Cook in a pre-heated oven at 180ºC for 20 minutes or until you insert a toothpick in the middle of a cupcake and it comes out clean.

Let them cool for an hour.

For the frosting, mix all the ingredients together with an electric mixer. Place the frosting in a pipping bag and decorate your cupcakes. Place a raspberry and a mint leaf on top of each cupcake for garnish.
