It has been a while since my last post. Truth is I've been busy taking care of my little monkey and work has been also very demanding. But this bank holiday weekend I got some time to cook one of my favorite dishes of all time: eggplant parmigiana.

I swear by these pancakes. My baby girl loves them and they have no sugar added at all. They are great to use up all the leftover baby cereal you have around your house. This also makes a great finger food for your tot, even if he has only a couple of teeth (just like mine). Or you can make them for just for yourself.

I'm from the land of the Jesuítas (which means Jesuits), in Santo Tirso, Portugal, and I couldn't help but bake these treats. But since I don't specially like to eat them simple (just the puff pastry and the sugar topping) I added custard as a filling and I must say it is a must from now on.
